A room to experience sake differently.
HEYA HONG KONG was founded to give a new dimension to enjoying sake in Hong Kong — a cozy space where everyone can experience something different, staying away from the hectic city.
Born from a passion for sake in Hong Kong
HEYA HONG KONG was founded by Billy Au in 2021, with a clear mission: to give a new dimension to enjoying sake in the market of Hong Kong. In a city where sake was largely misunderstood or overlooked, Billy saw an opportunity to change that.
The name HEYA — meaning room in Japanese — speaks to the experience itself: a cozy, welcoming space where everyone can discover something different, a deliberate departure from the hectic pace of Hong Kong city life.
What began as intimate tasting evenings has grown into Hong Kong's most immersive sake programme — always keeping the same intentional small size, the same reverence for the craft, and the same belief that sake deserves to be understood, not just consumed.
In Japanese, heya (部屋) means room — a space of intimacy and presence. It is where we step away from the noise and allow something slower and more meaningful to take hold. Our name honours that intention.
Your guide through the room
Certified Sake Sommelier with over ten years of drinking, studying, and experiencing the world of sake. Billy founded HEYA HONG KONG in 2021 with the mission to bring a new dimension of sake culture to Hong Kong — creating an intimate space where curiosity is welcomed and depth is celebrated.
Three principles that guide everything we do
Sincerity
We never simplify sake to make it palatable. We give you the full truth of the craft, trusting that complexity is the source of pleasure.
Depth
Every session goes below the surface. We talk about water chemistry, rice genetics, and the invisible work of microscopic life that turns starch into silk.
Pause
Sake rewards slowness. We build silence and reflection into every session — time to actually taste, not just drink. No rush. No performance.
